2 Gallon Batch:
2.5 lb pilsen
3 oz honey malt
2 oz caramel 20 malt
.25 oz Motueka Hop @ 30 min
1 oz fresh grated ginger @ 5 min
zest of one lime @ 5 min
zest of one lemon @ 5 min
1 oz fresh grated ginger @ 0 min
Juice of 1/2 lemon & 1/2 lime @ 0 min
1 oz fresh grated ginger in secondary fermenter
(Can add more ginger if you want your ginger beer more on the spicy side)

86% pilsner malt
8.3% vienna malt
5.7% victory malt
2X decoction mash
90 minute boil
1 oz hersbrucker & 1 oz mittelfruh @60
1 oz mittelfruh & 1 oz saaz @30
2 whirlfloc tablets @ 10 minutes
Wyeast 1010 American wheat ale yeast
ferment cool (55-58 degrees Fahrenheit) 2 weeks
dycetal rest 48 hours at 62 degrees Fahrenheit
after d-rest, transfer to 2ndary, lower temp 3 deg. Per day until 34F.
lager 30 – 60 days prior to kegging
carbonate keg, store additional 2 – 4 weeks prior to serving
